I’m wondering if a couple coats of white EkoPoxy covered with Insignia White will have enough UV protection for a composite cowl.

Plenty, No need to worry about that especially if you plan to hangar the aircraft.

The EkoPoly Premium has a ton of UV protection in it’s self.

Can you expand on the UV protection in the Ekooly?
Is there more protection in certain colors like white?

Yes white paint will have more UV protection due to the titanium dioxide used to make white. The properties of the standard clear paint base all by it’s self provides some of the UV protection by diffusion of the light waves. Remember UV is not part of the visible light spectrum.
